Chocolate Courgette Cake
This simple chocolate is a great way of using up courgettes. The courgettes make it really moist and yummy - trust us!
Ingredients:
200gms (7oz) plain flour
1tsp baking power
1/2 tsp bicarbonate of soda
1/2 tsp salt
125gms (4oz) castor sugar
6fl oz vegetable oil
2 largish eggs
170gms (6oz) good quality plain chocolate
240gms (8oz) firm courgettes (peeled weight)
56gms (2oz) finely chopped walnuts
Method
Sift all dry ingredients into a bowl.
Grate the peeled courgettes and set aside.
Melt chocolate in a bowl over a saucepan of hot water.
Meanwhile, beat the eggs with the oil, and then beat into the dry ingredients.
Carefully stir in the melted chocolate, grated courgette and the nuts.
Pour mixture into greased and floured (or lined if preferred) tins.
Bake either in 2 x 8" sandwich tins at 180degrees C/350'F/gas4 for 25 - 30 mins, or in 1 x 8" round cake tin at about 170'C for 1-11/4 hrs.
Serving suggestion: fill with whipped cream and dust the top with icing sugar.
